Process: picked from vines in the Campanha Gaucha, the grapes are cold fermented and kept in stainless steel tanks. After the separation of the stalks, the grapes are sent to the tanks to start the fermentation process with selected yeasts. the temperature is controlled so that it never reaches more than 77°F. This process takes 7 days.
